Renting a vacation home offers a number of benefits to travelers. One of the best things about our beach homes is their fully equipped kitchens! You can save some money by preparing tasty family dinners right in your own rental home, with fresh, local ingredients! Here are some of our favorite beach-themed recipes for you to try out on your next trip:

Mahi Mahi Tacos: If you’ve ever eaten freshly-caught fish, you know there is nothing tastier. Take a fishing excursion while on your beach vacation and bring home the catch of the day for dinner! When made with fresh fish, these mahi mahi tacos will be the culinary highlight of your vacation.  

·         4 mahi mahi filets, grilled and flaked

·         Flour tortillas

·         Canola oil

·         Fresh pineapple chunks

·         Citrus vinaigrette

o   ¾ cup orange juice

o   ¼ cup lime juice

o   1 cup fresh cilantro

o   1 cup fresh basil

o   1 tsp salt & pepper

o   1 tbs honey

o   ½ cup canola oil

§  Mix well in a blender or food processor and drizzle over tacos.

·         Reb Cabbage Slaw

o   ¼ cup rice vinegar

o   1 tbs sugar

o   2 tbs canola oil

o   ½ head red cabbage, shredded

o   1 cup shredded carrot

o   ¼ cup chopped cilantro

o   Salt & pepper

§  Mix in a bowl and top tacos with slaw.

·         Tomato and Avocado Salsa

o   4 plum tomatoes, chopped

o   2 avocados, diced

o   ½ small red onion finely chopped

o   1 serrano chile, finely diced

o   1-2 juiced limes

o   2 tbs canola oil

o   1-2 tsp honey

o   3 tbs chopped cilantro

§  Mix in a bowl and top as desired

Teriyaki Turkey Burgers: If your rental home comes with a grill, these yummy teriyaki turkey burgers are a great spin on the classic. All you need is a bag of burger buns and your favorite toppings, and you’re all set!

·         1 can pineapple slices

·         ½ cup teriyaki sauce

·         2 pounds ground turkey

·         1 tsp fresh grated ginger

·         ½ cup panko break crumbs

·         Salt & pepper

·         Monterey Jack cheese

·         Lettuce, tomato, onion as desired

·         Burger buns

o   Drain pineapple slices and reserve juice. Mix ½ cup pineapple juice with teriyaki sauce. In a large bowl, mix ¼ cup teriyaki mixture, ground turkey, ginger, and bread crumbs, season with salt and pepper. Form into 8 patties and grill, brushing the patties with the remaining teriyaki mixture while they cook. Top with cheese, pineapple slice, and any other desired toppings, serve and enjoy!

Spiked Pomegranate Lemonade: A patio-dinner at the beach isn’t complete without a yummy and refreshing cocktail. We love this one for its fabulous summery taste, and it can be made in a pitcher for easy refills. For a kid-friendly version, just leave out the booze, top with fruit, and don’t mix up your glasses!

                For one drink:

·         1.5 oz. red berry vodka (we recommend Ciroc)

·         1 oz. lemonade

·         0.5 oz. pomegranate juice

·         0.5 oz. lemoncello

·         0.5 oz. simple syrup (equal parts sugar & water, boiled and cooled)

Garnish with a lemon twist, strawberry slices, or a spritz of lime!
